Khao Chae (ข้าวแช่) is a royal Thai cuisine adapted from a Mon dish since the time of King Rama II. Khao means 'rice' and Chae means 'to soak'. The rice is soaked in the cool water to be consumed during the hot season from mid-March to the end of April.
